Need to whip out breakfast for your kids in no time?
Try this homemade pancake mix using Bellamy's powdered milk. They are incredibly easy to make, without any preservatives, unlike those pre-packed mixers that you get in stores. Makes the fluffiest pancakes too!
Recipe (Makes about 20 small pancakes)
2 cups all-purpose unbleached flour
1/2 cup Bellamy's Milk Powder
1/2 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
3 tablespoon fine castor sugar
1 large egg
3 teaspoon canola oil
1/2 cup water
Measure out and mix all the dry ingredients well.
Add in the wet ingredients and whisk well (you can do this by hand easily) until the batter is smooth and thick with a soft-dropping consistency. This is an important step. If batter is too thin, you will have crepe-like pancakes and if too thick, it will not spread nicely.
Fry on lightly-greased pan until golden brown on medium heat.
And voila...these lovelies are done!
